BEEF SHORT RIBS are cut from the chuck and plate primal sections. They have a lot of flavor, but are fatty and fairly tough. Short ribs generally require long periods of cooking in order to break down the connective tissues in the meat and make the meat tender. Our BEEF CUBES are cubed from beef topside. Topside comes from the inside of the hind leg, between the thick flank and the silverside. Topside is extremely lean and performs best when diced for slow-cooking in a hearty stew or your favourite curry/rendang recipe.
