15 MINS PREP BEEF SHORT RIBS RECIPE

INGREDIENTS
- 5-10 pcs beef short ribs
- salt
- pepper
- 1 onion, chopped
- 4 cloves garlic, smashed
- 2 sprigs fresh thyme
- 1 1/2 cups chicken/beef broth
- 1 cup red wine (option: replace with broth for halal recipe)
- 1 tbsp tomato paste
- OPTIONAL: Carrots, potatoes etc... anything goes!
STEPS
1. Season all sides of ribs with salt & pepper.
2. Turn on your pressure cooker to saute mode at high heat. Add oil & sear 3 sides of the ribs (top, left, right) for about 3 mins each side to lock in the flavours. You should be able to sear about 5 pieces per batch in a pressure cooker pot, which will take about 9 mins total. Remove ribs from pot after searing. (OPTIONAL: SKIP THIS STEP FOR A SUPER FAST PREP)
Note: Searing meat activates maillard reaction which gives the meat a deeper flavour. Feel free to skip the searing step if you are short on time!
3. Add onion, garlic, thyme, tomato paste and saute.
4. Add broth and/or wine. Let it simmer for 1 min.
5. Add ribs. Close the pressure cooker. Cook at high pressure for 45 mins & let natural pressure release for 15 minutes.
Note: if using slow cooker, add additional 1 cup of broth and cook at low for 6-8 hours.
6. Remove ribs and serve. You may switch to saute mode to further reduce the sauce to make it thicker if you wish.
